My favorite is former SANDBAGGER Roy Marsden. He would be perfect as the grumpy M from the books.

I think they're more than capable to play M. I wouldn't mind seeing Sir Sean Connery in the role, either Probably not going to happen, though!
That's a fun idea; he would be rather good. He's got a great voice, too.
How about someone like Timothy West?
My choice from the list above, just without thinking would be Ian Mckellen. Sean Conery would be great, but just not going to happen.

Terence Stamp would have been perfect IMO.
Might be a bit too remeniscient of Death Train!
Most of the other suggestions like Caine & Patrick Stewart are just too connected with other recognizable franchises...

he's wonderful in spooks,and the move from mi5 to head of mi6 should be no problem at all.
plus he was great in the double deckers,anyone else remember that?:D
