had BLTs last night...and Teddy (a friend who was over) declined the LT part and put cheese on instead. kid's a carnivore, what can I say.
Hmmmmm, never thought about just a cheese and bacon sandwich. Maybe make it a grilled three cheese sandwich with lots of crumbled bacon? Now, which three cheeses go good together.
Well, today I made Grilled Cheese with bacon. Better than I thought, but could of probably been even better. I used Swiss Cheese and American Cheese, Applewood Smoked Bacon on Potato Bread. It was good, but some bites all I could taste was the bacon. I used one slice of bacon per sandwich (yes, theres leftovers.) Maybe next time I'll use two slices of each cheese, maybe a different bread or different bacon.

Grill or fry rashers of your favourite bacon (dry-cured back is usually best), then whilst cooking fry diced smoked streaky (belly cut) bacon until crisp, then add grated Gruyere cheese, smoked cheddar and a little parmesan reggiano and stir until melted. Toast two slices of soft thick white bread on one side and then paste the mixture on to each slice. Place under the grill until golden and bubbling, then lay the bacon rashers on top, sandwich together and it's ready.

Tonight was lamb chops coated both sides in mustard, chopped mint and brown sugar, and grilled until golden - served with straw chips and garden peas. Delicious.

Homemade pizza tonight in the pizza oven I made outside. You lite the logs, let the embers go down to a glow then push them to the back and cook the pizzas on the stone base. Average size pizza takes about 5-6 minutes and tastes fantastic!
Cheese, tomato and pepperoni for Mrs. thesecretagent and cheese, roasted pepper and spicy beef strips for me.

Tonight is my chilli speciality. Diced skirt and chuck steak, roasted peppers, garlic and great tomato sauce. Loads of kidney beans. All served with rice, gucamole and tortilla chips. Plenty of Fosters with it. I don't know why, but that aussie beer goes great with hot food.

Isn't it deep pan (upside down filled) pizzas that are popular out your way, as opposed to thin crust New York style pizza? I don't know where I heard that, but pizzas in Chicago are deep filled in a pie dish with cheese on the bottom, then filling and sauce on top. Is that right?

Yeah, Chicago style is deep dish...but we've no shortage of thin crusts also! Pop's in Quincy is a thin crust...and it is fantastic! We went there Friday night; My friend and I, plus my sons, Loeffelholz Jr. (14) and Loeffelholz III (12)...and we ate TWO 16-inch pies ;%
The best Chicago style pizza I had this year, ironically, was in Metropolis, Illinois---at the extreme southern edge of the state: as far from Chicago as you can get and still be in Illinois!

thinking about ordering Domino's chicken nuggets and breadsticks....if not them, then frozen taquitos...tonight is "Kelsey is lazy and doesn't want to cook/do more dishes" night.
Went to a huge BBQ for Guy Fawkes Night, and after the fire was lit the BBQ fired up and there was all sorts of unusual things cooking away - like game - partridges, rabbits, pheasants and venison (deer) steaks with all sorts of glazes, dips and sauces. Also there was pork, beef and lamb chops/steaks. And as a bit of fun, there was mystery meat! You had to eat some, mark what you thought it was, and how good it tasted. A few too many beers and I signed up for this (the money raised all went to charity, so you've got to get into the spirit a bit). And I'd eaten a lot of different things over the years in the army like snake in Borneo, crocodile in Belize - even baboon we shot ourselves in Africa.
It turns out I ate some squirrel (I actually feed these with my 3 year old daughter, so felt terrible), and goat steak (which was nice, but just like mutton (older lamb) and then after lots of teasing with chicken and beef strips to confuse us, I finally ate some rat. Yes, rat! It wasn't bad actually, especially with some peanut satay sauce. But I just heard today that the guy who organised the do (£1800 was raised for a cancer chairity) is being threatened with legal action by a woman who isn't too pleased about eating some rat...

Tonight is more traditional fayre, and very French - Coq-au-Vin. That's chicken cooked for hours in red wine, tomatoes, garlic, onions, mushrooms, rosemary and thyme. Served with creamy, buttered mashed potatoes and some fresh purple sprouting broccoli. To accompany - a glass or two of Merlot. Bon Appetite!
