    All this talk of ribs has me wanting to cook some for myself. The bad part is I don't own a BBQ. I'm thinking of seasoning them, then putting them in a tin foil tent and bake at 250 degrees for three hours. After three hours, unwrap, sauce them up and cook for 30 more minutes. Anyone think the ribs will stay juicy?
    Some people would complain even if you hang them with a new rope

    Tonight it's a bit of a novelty treat, which we do from time to time: Breakfast for Dinner B-)

    A nice big ham steak, with hash brown potatoes, and three fried eggs---cooked 'over easy', to facilitate the ritual dipping of the toast into the runny yellow yolk! :) Mmmm....

    One of my all time favourite meals tonight, taught to me by my sister in law, which I have now called Sacramento Pasta (my brother and Kaye lived in San Fransisco at the time)

    Roma tomatoes (the riper the better) - sliced, basil - torn, brie - cubed, black olives - sliced, avacado - sliced, marinated in several glugs of Olive oil with 2 cloves of crushed garlic, pepper and salt for at least an hour.

    Pasta shells cooked - and drained, then the above mixture mixed in. Serve.

    I make enough for 2, but usually end up with it all eaten by me :D

    Roasted Aubergine, courgette, red peppers, onions - mixed with couscous and feta cheese, with chopped fresh parsley, drizzled with olive oil and balsamic vinegar.

    Mexican pork steak, cooked with tomatoes and home-grown garden chilis...and sopa---a Spanish-style, paella-type dish with angel-hair pasta, sliced onion, stewed tomatoes, cumin and various other spices...I'm wiping a spice-induced tear of joy away as I type this...

    And for starters, pico de gallo---an uncooked, home garden-grown salsa with tomatoes, onions, basil, cumin, etc., and white corn tortilla chips...

    You guessed it. A good early crop of tomatoes in the back yard :D

    The woman of the year made pasta with fresh porcini and her special fried shrimps. Hmmmm

    For the ones, who have been following my attempts to get spareribs more tender: Moussed pineapples work!. Just peel a fresh pineapple and mousse it. Put the mousse on top of the ribs and have it in the fridge for 1 day.

    The meat will fall off the bone much easier and the meat is still very jucy. We'll have this by next week again!

    I have been purchasing some Marlin Fillets and we once had Marlin Southern (St. Louis) style once in a US restaurant, but don't recall the details. Does anybody here have a recipe for Marlin Southern Style?

    as for dinner, it wasn't that exciting. Had some delicious, fresh sweet corn from a local farm stand and some left over Chinese food that mom brought home from a picnic she and a friend had last night.

    Getting back OT, I caught some large signal crayfish a couple of days ago in out local woodland stream, I've be waiting for decent weather so that I can BBQ them on an open fire. At the moment I'm feeding THEM, as it's illegal to throw them back as they are invaders.
