I know everyone loves the "I expect you to die!" quote, but my favorite is simple

A brilliant bit of direction in the gold smuggling discussion, where Col Smithers (the harrassed buffer off A Hard Day's Night and cast to signify antipathy with the Profumo era) is boring for England and the camera slowly pans back, as if, to represent a Fleming phrase from the novel "Bond felt boredom gathering in the corners of the room..."
And the way Smithers moves the brandy bottle around as if visually representing the way gold changes its value according to location.
The "Drinks for 3" quote from Leiter at the end is good, it's funny but alerts the viewer that it should be only Bond on board the aircraft.

I love the expression on Goldfinger's face when Bond says "Operation Grand Slam. I did enjoy your briefing." After a pause he replies, "So did I." Gert Frobe is absolutely wonderful, what an inspired piece of casting.
M: "She" is me, Miss Moneypenny. And kindly omit the customary byplay with 007. He's dining with me and I don't want him to be late.
Bond: I'd say it was a 30-year-old fine, indifferently blended, sir... with an overdose of bon-bois.
M: Colonel Smithers is giving the lecture, 007.
Not the most memorable of quotes, but I love that Goldfinger ironically ignores golfing etiquette in this exchange:

Every time Bond (or anyone else) says "Pussy". I think this was very risque in a family movie at that time. In the "inside Goldfinger" documentary Honor Blackman tells that when she was in America promoting the movie, the interviewer was trying really hard to avoid mentioning the first name of Miss Galore. Honor Blackman was having fun with this by trying to use the name as much as she could. For example: Ïnterviewer "The character you play is (...)" HB: "O you mean Pussy? Yes she is (...)." In the film there are a few times where Connery's delivery of the line almost has a schoolboy "o look what I dare to say" feel to it. The most obvious one to me is the one before "now who taught you judo"
But to quote Moore Than "Goldfinger is loaded with memorable quotes." IMHO the meeting between M, Smithers and Bond is one great quote as a whole. We also get the first real Q lab scene. M putting Bond back in place "This isn't a personal vendetta, 007. It's an assignment, like any other. And if you can't treat it as such, coldly and objectively, 008 can replace you." Bond also refers to 008 when Goldfinger is about laser him in half. I have always liked that bit of continuity.
