In terms of action sequences, GE raised the bar for the series particularly in the high-speed chase (AM vs. Ferrari), the OTT tank chase, OTT shootout in St. Petersburg (the novelty of OTT first instances lets them get way with them!) and nowadays Brosnan gets some flak for "running like a girl" but up to that point that was the most serious running Bond has done on the screen (perhaps with the exception of Dalton in the PTS of TLD) only to be topped by Craig in CR.

I don't think the fights Bond had with athletically superior opponents were as interesting vs. fights with equally-matched opponents. Basically in the Connery movies, those unmatched fights were with Odd Job and Hans where the other guy lumbers around and is largely unaffected by Bond’s blows though I guess it's just how they're written, regardless of how good the stunt performers were. However, also in YOLT, the Sumo wrestler who you would think is another Odd Job, surprises us with an interesting fight and mixes up with Bond nicely, thanks of course to the quick-cut editing technique of the Bond vs. Grant fight and the inventive aspects of the fight like the uses of a samurai sword, a couch and a stone sculpture; I think Bob Simmons was also involved in those fights, so creds to him as well.
The fight with Jaws on the train is so slow. As you say it's

The build up in the film is exceptional so it has to be Donovan "Red" Grant
I don't take the Trevelyan seriously.I saw Sean Beans arse go up and down the week before in Lady Chatterley's lover
