I hate to agree with any dissing of my man Sean, but that rug in DAF was definitely his worse! ) However, I still disagree with you about his performance. I wish DAF had been less campy and more in the vein of GF or even TB, but Connery's performance was as witty and assured as ever. Even the physical bits, like the fight with Franks in the elevator and the elbow to the face he gave one of the thugs who threw Plenty out the window, were well-handled by Connery. I have a feeling you'll come to realize that as more time passes and you give DAF a few more views.
I've been mostly joking. In all honesty, Connery didn't look bad at all in DAF. He didn't look as good as Moore in LALD (around the same age) but truth be told, he looked better than the majority of 37 year old men I see today who have actual beer guts.
I viewed DAF a second time and my opinion of it only worsened. In the long run, who knows, it might go up. It did have elements I liked. Connery in DAF, was really good at the wit, the charm, the dialogue, the conventional stuff. But when it came to the gags, he rode against the grain, and why his character wasn't angry at Blofeld at all is baffling.
Connery's Bond says "Where is Blofeld!", it sounded a lot like the low-budget Cold War era education propaganda videos where horrible actors pretend to be panicking.
It had its ups for sure. Like NSNA, the draw of it was seeing more of Connery's charm, and I did. But it was just sandwiched between so many painfully bad moments. If it's any consolation, DAF is joined by Moonraker in the bottom rung.

Which Bond films haven't aged well? This could be down to anything in the film. Here are some:
Thunderball The effects used - such as back projection and sped up footage - makes most of the early films look dated, but it hits this one the hardest.
I have to say I do particularly dislike the "speeded-up" footage in the Connery films. I understand why they did it, but it looks terrible, and detracts from these otherwise beautiful films.

I also think Conti's scores are dated, though some of his tracks work for me. The track for the ski chase in FYEO sounded ok to me when I saw it in the cinema, but upon rewatching it over the years it now sounds like a track from one of the Rocky films and seems out of place. I've watched the scene with the sound off and imagined the OHMSS theme in it's place and it seems much better. Conti's music often sounds like the type of fluff composers use for TV commercials.
I enjoy LALD. It has an easy pop/jazz score and the only aspect that dates it is the use of the wah guitar pedal (a 70's funk signature). The score and the theme were a bit startling to me at first after years of Barry's work, but after a while I found it suited the film. McCartney did a great job on the theme song, though I will always be disappointed with the bridge in it - the song is strong and driving throughout then shifts at the bridge to that jaunty, light feel and it just never seems to work for me. It almost seems as though the took the theme song seriously, then decided to put his own fun spin in the middle to show he really didn't.
GE and LTK are weak to me. Some tracks are ok - they don't date them to any extent, but I just don't think techno pop works for Bond and the LTK score just sound's too generic.
Barry's music is timeless because his background is in jazz and classical music and both are timeless to the ear. His signature style combining the repeat motifs, blaring horns and haunting woodwinds have been used in different ways by many other classical/jazz composers and it's why soundtracks from any era done this way are timeless. Goldsmith, Hermann, etc all used it and none of them will ever date.
For me what dates the films most is the score. FYEO, LTK, GE.
I don't find then cutting edge technology dates the film. All the movies will be dated then. QoS they were using flip phones and that's hardly dated.
I never thought the LTK score sounded dated. It doesn't use any pop sounds like TSWLM and FYEO, which are two of the most dated scores. The GE score doesn't sound dated to me, but the atmosphere it creates just ruins the film for me.

I actually have a flip phone myself, but for Bond to use one just looks old-fashioned now. I want my Bond scores to be bold and memorable, something I can hum in the shower and listen to in the car, and make me relate back to things in the movie. Even the Opera scene in QoS has a hummable score (to me), even if it's repetitive and not that interesting. I do agree the score of GE lets the film down. It was 1-2 in my ranking but is 3-5 now due to the score.
I think it's unfair to say that about the phones because...well, that phone in the car in FRWL... )
In the TSWLM docu Bach argues fashion with the director , with Lewis saying what's hot now in clothes might be dated next yr etc.
Nobody stopped Bond from wearing what was hot in fashion, thus along with LTK and SF is has Bond looking the most dated. Barbara Bach mostly looks quite timeless in the film, though there are a few outfits that don't hold up particularly well.
