Great topic with lots of fun responses. I'm doing this by "genre" -- here are my best stunts for...
CLEVERNESS -- Crocodile stepping stones in LALD. Yeah, I know they were tied down, but what a great idea.
OUT-OF-THE-BOX THINKING -- Spiral car jump in TMWTGG. Quibble all you want with the slide whistle and JW Pepper, but someone actually had to dream up that stunt.
WISHING I WAS DOING IT -- Not so much a stunt per se, but what a blast it would have been to fly Little Nelly!
HOLY S**T, THAT LOOKS DANGEROUS -- Hanging out the back of the plane in TLD. Aside from being thousands of feet up, it looks like they're in constant danger of being buffeted into the plane itself.
WOW, THAT TAKES SERIOUS SKILL -- One-legged skiing in OHMSS. I know the final product was sped up, but still.
IMPROVISING WITH THE WRONG TOOLS -- Skiing down the bobsled run in FYEO. Same stunt coordinator as in OHMSS.
OVERALL SPECTACLE -- Rick Sylvester, Mount Asgard, TSWLM. On its own, the stunt is great. But the Union Jack, the photography and the score push it to epic levels. As someone said above, it stands with any iconic stunt in the history of film.

I watched TMWTGG in honour of Sir Christopher Lee last night. Didn't EON have to "purchase" that stunt?

I'm not sure, but it was completed in one Take there and then -{
1.On Her Majesties Secret Service 2.The Living Daylights 3.license To Kill 4.The Spy Who Loved Me 5.Goldfinger
Where would you start ??? I think for its nerve jingling content ,I will have to go for Roger Moore climbing up the rope using his boot laces ,as make shift rungs , can that actually be done ??
A truck on two wheels, is similar to a car on two wheels. It's all a
matter of balance. ( You have to empty the tanker obviously, can't have
any liquid splashing about, upsetting the balance) .
Sadly so many " death defing " stunts are dismissed as " CGI" instead of
the amazing skill and frankly " Balls" of those brave stunt men and women.
I remember having an argument with a mate years ago, who didn't believe
the spiral car jump was done for real. He thought it was a mixture of model
work and animation. 8-) as it was " Impossible " )
"I've been informed that there ARE a couple of QAnon supporters who are fairly regular posters in AJB."
For me as an impressionable teenager back in 1973 the stunt that's made a lasting impression on my mind is the speedboat jump in LALD.
I remember reading an article in the paper back in the day that showed all the mathematical calculations for it. Plus a real guy did it not once but twice. Many great stunts throughout the years and as others have said Bond normally sets the bar and its always high.

I always thought that was a great stunt, and one that fit perfectly into the boat chase. I also liked the other boat that became a car-boat!

years after the film, something like that.

2.- TLD PTS chase.
3.- FYEO rock climbing
4.- CR construction site chase
5.- OHMSS sky chase.

You really have to see LTK.
They were real Kenworth trucks doing real stunts in real time. Nothing gratuitous about them..

That took some split second timing. -{
Even Roger got injured during the boat chase
