3 hours isn't enough time. There's two eras, the Connery-Brosnan era and the rebooted era. In the old era I'd probably show For Your Eyes only, maybe License to Kill. In the new era it would be Casino Royale. If I'm forced to choose only one, I'd go for Casino Royale.
On this topic though, what I always found to be really strange is that Sean Connery said in an interview behind the scenes of Diamonds Are Forever that Fleming was also on the set on the bahamas for Thunderball. I always assumed he already died by that point. So apparantely Connery was either having a false memory or they started filming Thunderball rediciously early before Goldfinger even hit the theatre's. (I guess it's possible, since they were still releasing the films in concecutive years back then...)

I highly doubt it. Principal photography on Goldfinger was between January and July of 1964; Fleming died in August of that year; and principal photography on Thunderball began in February of 1965 - six months after Fleming's death - so I can't actually imagine that happening.

Yes. He probably would have liked how his material from his short stories and bit from novels was turned into two great films. He would have liked Moore's refined take on Bond since Moore was the kind of actor Fleming wanted to play Bond (along the lines of David Niven and Cary Grant), but Dalton is so far the closest to the character Fleming actually created.

Easy..Goldfinger. Unfortunately he died just before it came out. I think he might have been a bit taken a back by the gadget injection aspect but pleased as he might have realised that this was the "game changer" that would make the series so durable.
CR. He would have been dazzled by action set pieces the like of which were unknown in the cinema of his day - and also he would have appreciated the way elements of his novel had been staged and visualised.
Failing that, he might have enjoyed LTK, FYEO or SF. OHMSS too - but I doubt he would have been a Lazenby fan. As for GF, he would have begrudgingly liked it, possibly embarrassed by the way in which the screenplay makes Goldfinger's fantastic plot slightly more plausible than it is in his novel!
Critics and material I don't need. I haven't changed my act in 53 years.
I would show him Goldfinger - while he frequently visited the set, and saw the production and filming going underway, just as he did the previous two, he died before the film's world premiere.
I would show him the finished product of what is arguably considered by critics to be the most appreciated/praised of all the bond movies.

On Her Majesty's Secret Service. Except for height and accent, Lazenby is the closest in physical description and temperament to the character that Fleming created on the page. The movie follows the book plot reasonably well, and though I think Fleming would have been disappointed with Telly Savalas as Blofeld (too American), I do think that he would have been comfortable with Diana Rigg, despite her having darker hair. Fleming likely would have been pleased that they had the courage to keep the ending. I suspect Fleming would enjoy elements of some films, such as Casino Royale, but still feel they didn't quite get it right.

Why do you say he wouldn't have liked Craig? In a number of ways, he's much truer to the character than Connery was. Purely on Craig's physical features, or would Fleming find him a bit morose?

Being Ian Fleming's cousin, Lee is a reliable source. I agree with him. Physically Brosnan is probably as close as it gets, even down to hairstyle. It's a pity that he had some of the worst scripts ever. Character-wise, Dalton and Craig are closer. But it's nice that Lee tried to help good ol' Pierce in his tenure.
