    because Mr. Loeffelholz reminded me to post this here...

    chili :D

    red peppers, onions, ground beef, fresh tomato puree (from the garden), chopped garlic, ground cumin, ancho chili powder, chipotle powder, kidney beans and chili sauce with a little water...all thrown in the pot at the same time, and left to simmer for a couple hours.

    then, mash up some avocados and squeeze some lemon on...

    poof. Pen's chili dinner :D

    How did i miss this thread? Anyway, my Lancashire Hotpot turned out nicely, other than a little too much liquid, soupy as we call it. I'm going to try for Yorkshire pudding this weekend with a beef roast.

    last night was spare ribs with home fries on the side...paired with some excellent old vine red wine.

    Not posted here because of yo-yo dieting. Decided to just try and eat healthier food, cover all the groups and take it from there.
    Butterflied chicken breast marinaded in garlic, parsley and olive oil and grilled. Steamed green beans, cauliflower in cheese sauce. Tasted pretty darn good actually.... :D

    Hey Ammo08, try this - 1 cup of plain flour, 1 cup of semi-skimmed milk, 1 cup of eggs, a good pinch of salt, about a teaspoon of cornflour. Whisk vigorously, then rest the mix for at least an hour. Get either a roasting tin or cup cake tray really hot in the oven, add oil (beef dripping is more traditional) you want about a 1/4 inch of melted fat in there. Get sizzling hot, then add the mix up to the top of the cup cake tray portions and cook on max in the oven for 15 to 20 minutes. I do this every Sunday throughout the winter months, tried and tested and an old family recipe. A little left over batter mix is also great the thicken the gravy.

    Went to Russian-owned Navikov in Mayfair for a freebie. Awful reviews on the 'net but the Asian Restaurant was very good; there is an Italian one there too and also a downstairs lounge with a From Russia With Love poster there.

    Very good for Black Cod Rolls with mango, a starter that is about £15 :s and the desserts at £8 are great too, still you don't have to have a main course. Nice vibe, bit of a shock to see the bewildered lobsters twitching on the ice though, bit of a first, still worse for them I suppose.

    I'm new to pulled pork. Just saw it today on Man vs Food on he food network. It looks amazing! I make chilli with pulled brisket cooked for about six hours, and it's fantastic, so BBQ pulled pork is something I'll be having a go at very soon.

    New season asparagus, first of the Cornish new potatoes boiled and lightly salted and buttered, and spring lamb chops with a lightly minted Hollandaise sauce. Delicious and a taste of English spring on a plate!

    If you ever want to Hollandaise here's a fool proof recipe-
    Heat a pan of water and place a glass bowl on top. Crack 2 egg yolks in the pan, add a dessert spoon of white wine, a teaspoon of English mustard, a squeeze of lemon and whisk as the pan heats. When it's doubled in volume, add 200 g of melted butter a little at a time and keep whisking. If it curdles, add a little of the boiling water and stir well, or a squeeze of lemon juice.

    Add tarragon for James Bond's Bernaise sauce (Diamonds Are Forever (book)), or mint for lamb, capers and anchovies for fish, or horseradish for smoked fish or fillet steak.

    it's one of my favorites! the pulled pork tacos at qdoba (quick Mexican food for those who don't have it) are AMAZING!! might have to go get some tomorrow! glad you tried it TSA!!!


    tonight's dinner was Nachos. season opener for my home team tonight (they won!), so I had to have a ballpark type meal!

    Firing up the charcoal pizza oven tonight. The trick is to get them inside before the cheese goes hard! We're having plain tomato and mozzarella with pesto and a pepperoni, salami and Parma ham with shaved Parmesan . To go with them, some roasted vegetables in oil and vinegar. :D

    Ahh, well being something of a foodie, I'm always cooking (or just eating) interesting things.

    Tonight, it's sandwiches. Roasted eggplant, zucchini, squash and tomato on ciabatta with homemade ricotta cheese (which is quite easy to make!).

    Had a selection of curries, rice, naan and pickles last night. Actually feeling quite rough this morning . Too much butter, spices, garlic and chilli. It's killing me from within! Actually feel like starving myself today... :#

    Last night: Beijing duck in a great traditional restaurant in Hong Kong
    The night before: Simple but very fresh seafood on an island called Lamma 40 minutes boat drive from Hong Kong.
    We've had shrimps, mussels with a garlic sauce, deepfried squid, fish and some other things. All the fish stuff was alive 5 minutes before it ended up on our tables. Washed everything down with some of these huge 640 ml. bottles Tsingtao beers. Life is great!

    Super easy. Hour cooking time tops. Even better if the leeks are from the garden!

    Tonight, as it's dads birthday, he picked shrimp with cincinatti carrots...which are basically sliced carrots cooked with bacon bits with maple syrup poured over them...sounds weird, but is SUPER delicious. Old family recipe.

    Well it's a dull and wet day here in Kent... so I thought I would do a spot of cooking...

    So for dinner tonight it's home made lasagna, with proper bechemel sauce (made from scratch, which was infused with bay leaves and pepper corns) - with a layer of roasted aubigene in the middle.

    Then I had some rather brownish bananas, so it's a quick banana loaf as well.

    Kitchen looks like a bomb's gone off, but the smell from the oven, makes it all worth while :D
